It has been a long while since I have posted a recipe on my blog. I have been making these muffins a lot lately. My kids love them, and that is always a bonus to get my kids eating healthy stuff. My friends have been asking for the recipe for the last month. Sorry it took so long!! The recipe started out from the Malto Meal box. I then just substituted out and added in things that best suited our way of eating to make it healthier. If you are gluten free you can always use rice flour instead of wheat. We have a juicer so I just save some of the pulp in a container in the fridge, so I have it on had when I make my muffins. You don’t have to, but it is a great way to add in veggies and your kids won’t know the difference.
1 ¼ cups whole wheat flour
¾ cup Malt-o-Meal (or just add more flour)
½ cup brown sugar (or substitute honey)
¾ cup rice or soy milk
½ cup grated carrots or zucchini (or pulp form your juicer)
1-2 ripe bananas
¼ cup canola oil
1 teaspoon vanilla
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
Mix ingredients until well combined.
Preheat oven to 400 degrees. Cook 16-18min.
Makes 12 muffins
Yesterday we celebrated my nieces 1st birthday. Ruby is such a sweet blessing to our family and we were so happy to be celebrating her birthday with her. Daniel made some delicious strawberry Nutella crepes. Very Yummy!!
Cereal Bar Station
My dear friend Sarah is getting ready to have baby number 3. We all could not help but celebrate this new little girl. Really any excuse to throw a party and I am on it!! Christa, Katie, and Sara K. were my partners in crime and helped me so much! I love throwing parties with friends because everyone pitches in on the areas that they love, and it just makes everything fun and easy!!
The Best Grilled Cheese Ever! Are you hungry? Christa did all the food which was amazing. On the Menu that night was Broccoli Cheese and Tomato soup, salad, and grilled Panini’s. Thank you Christa for putting that all together. Oh FYI Cheesecake Factory Balsamic Vinaigrette “To Go” is so yummy!

I have not done a sit down dinner for a shower in a long time, it was fun to actually use real dishes. Thanks to Leslie who washed all those dishes after the party!!! What a blessing!!
The Ladies at Frosted Cakery out did themselves as always with our amazing desserts. The cake was divine, and the macaroons got rave reviews! They have a new store front in Tower District on Wishon, stop by for a cupcake and coffee, you will not be disappointed.

Our little Lucy turns one! Sheree hosted a lovely winter themed party. We had yummy soup with toppings, and warm bread. It was so good! Frosted Cakery did the cake, and it was divine as usual!
My husband is a heath food junky!! I can’t tell you how many times we have had someone over and he has offered them some sort of supplement, or he has updated them on the latest book he is reading on nutrition. It is a little ironic, because all growing up and even when we first started to date he did not eat like this!! I was the one that ate salads and fruit and he would have nothing to do with it. His mom even said as a kid he just liked foods that were “white” . Now that he is older all that “white” food may have caught up with him because he has definite issues with his digestions. This is of course a huge motivator in eating better. Honestly though he really likes it. I like healthy eating but I have to say it is much more of a challenge to stick to it. Now don’t get me wrong my husband does love his McDonalds and donuts some times, but I swear he get’s just as excited with his sprouted bread and lentils!
All that to say he is so committed to eating healthy like Really Healthy!!! I wish I were half as committed, and then I would never complain about all this “baby weight”, which I have to stop saying now that Noah is two. He is my inspiration!! He told me to take a picture of this meal because this is what he wished I cooked for him all the time. I am a work in progress. Ohh Lasagna, how I miss you, but my body thanks me as I step up my game and eat better.

Sheree hosted a lovely bridal shower for her friend Megan last night. She used mostly yellow and white, and had these amazing white umbrellas scattered around the house. It was so beautifully done.

Sheree gave these “Frosted” ladies a break, and made these amazing desserts herself. Yes, the nine layer chocolate cake was as good as it looks! Can this girl do it all or what!!

Well Debra I always get the best complements when I make your cookies, so I thought it was time to post your recipe. I definitely recommend this, if you are planning on doing a little Holiday baking this year. They are easy, and Oh so good!!!
Debra’s Chocolate Chip Cookies
4 sticks of butter (l lb.) Softened
1 box (l lb.) dark brown sugar
1 3/4 cup sugar
2 Tablespoons vanilla
Mix together in separate bowl:
6 cups of flour
1 1/2 tsp baking soda
1 1/2 tsp salt
Gradually add dry ingredients and mix well.
2 bags of chocolate chips
Bake at 350 for 7-8min. (Do not over bake!!)
